Because the marzipan is too soft to hold the flower shape on its own, it should be left to rest for a few days after it has been rolled out, this is to let the marzipan dry out and harden in order to prevent it from sticking to the cutter and to enable the handling of the daisy shapes without causing the petals to fall off.
